Following me around the house in the past few weeks is Canning & Preserving by Ashley English.
I am an autumn kind of girl when it comes to canning. The occasional chill wind reminds me that the end of summer is near but the market stalls are still filled with plump vegetables, the ground is bursting with berries and the trees are full of fruit. A mighty need to pack those summer flavours in little mason jars overcomes me.
In my first canning experience, 3 years ago, I preserved apples that a friend brought me from the Annapolis Valley. They were done in honey and with some homemade phyllo pastry they were transformed into delicious apple flips later in the winter.
As I am a sporadic canner, every year Canning & Preserving is my go-to book for a “canning-rules” refresher and motivation. The book is simply beautiful and jammed packed with information, step-by-step canning instructions (with photos) and mouth-watering recipes (rhubarb and amaretto chutney, anyone?). Ashley is also an inspirational homesteader and has one of my favourite blogs ever. Check out this book and others by Ashley on her website and enjoy the harvest season!
