I spent over 3 decades of my life without making a single cupcake! It doesn’t help that they were non-existent in Portugal during my childhood and that I’m not a crazy icing fan (probably also related to my Portuguese roots). Then you have kids, they go to daycare, they turn 4 and you want to bring a treat to class to celebrate this milestone. There I was at 10 pm with a pastry bag full of frosting for the first time in my life, straining my wrists to properly decorate said cupcakes. Things were not looking good and after a couple of cupcakes I had to enlist Chris’ help. He did a great job and the cupcakes were a success at school. I used an Oh She Glows! recipe that catered to the nut-egg-free food policy of the class. The cupcakes were so good that I had to print the recipe for the teachers!
The birthday celebration also involved a trip with the cousins to our local climbing centre Wallnuts. I was super impressed by how friendly and helpful the staff and climbers were when we showed up with 4 kids in tow that Friday afternoon. They have 5-points harnesses, kids’ climbing shoes, and loads of patience. We’ll be visiting them again! The actual birthday party was a small family affair (Samuel’s request) with more Oh She Glows! recipes including a delicious chili, amazing vegan sour cream, and birthday cake (from her book and decorated by the birthday boy).
